English Muffins
1 3/4 c. warm water
3 T. honey
2 T. yeast
2 T. olive oil
2 t. salt
Combine in a bowl and let stand for 10 minutes until yeast bubbles.
Blend in 3 2/3 c. hard whole wheat flour and 1/2 c. soft whole wheat flour (freshly ground). I am thinking that if you don't have a grinder, you can use whole wheat flour and whole wheat pastry flour with similar results. However, I cannot recommend highly enough a wheat grinder! I found mine on ebay for about $100 and have had it for several years now. It will pay for itself just in the money you will save by making your own bread! A 25 lb. bag of wheat kernels is about $12.00 and makes close to 40 loaves of bread?? I use the hard wheat for bread and the soft wheat to replace white flour. We are even making Dutch pancake with soft whole wheat flour! Wheat flour is so much healthier for you and freshly ground whole wheat flour is the best. Alright, enough of my plug for healthy eating . . . :)
Knead the dough for 8 minutes. I let my Kitchen Aid do the work. Let rise for 45 minutes. Then, pat out into a big rectangle about 1/2 inch thick. Cut with a glass 3 1/2 inches in diameter--or a biscuit cutter. Mine turned out real tiny because the diameter of my glass was small. I will make them bigger next time. Let stand 15 minutes on a baking sheet. Bake in an ungreased frying pan for 10 minutes each side. I did mine on low heat for about 5-7 minutes because my gas stove runs high. To serve: split open with a fork. So good, and honestly, these were really quick. Your kids could easily help make them, if not do it themselves. It is very satisfying to make something at home that is healthier and cheaper than the store-bought version!
