Pumpkin Baked Oatmeal

This is a great recipe that I came up with after tweaking a bunch of Baked Oatmeal reicpes and coming up with my own version to meet the appetites of a large family. I also added pumpkin with great results, because you remember my obession with pumpkin. Of course, you can half it if you want. It makes a lot and we still have leftovers--very filling.

5 c. whole oatmeal
1/2 c. butter, melted
3 eggs
1 c. brown sugar
1/2 t. salt
2 t. cinnamon
3 t. baking powder
2 c. milk
1 c. pumpkin
1/2 c. chopped walnuts or sunflower seeds (optional)
1/4 c. flax seed or wheat germ (optional)

Mix all in a bowl and pour into a sprayed 10 by 14 in. baking dish. Bake at 350 degrees for 30 minutes. Serve by cutting into squares and pouring warm milk over.

The oatmeal, is it cooked already? or dry oats?? I'm assuming cooked. Sorry to be dense....

No, it is dry. Whole oats, uncooked, just mixed with all the ingredients. :) Your not dense, I should have said that.

Hi! I'm just over from Ginny's blog @ Small Things. This sounds sooo goood. I often put pumpkin into my cooked oatmeal, but have never heard of BAKED before. We are trying this! Thanks for sharing the recipe.

Elisa and Jen, You will have to stop by after you make it and let me know what you thought! :) Sometimes, I add an entire can of pumpkin--it makes for a creamier baked oatmeal.

Laura, I baked it this morning and it was excellent! Plus, it made the house smell really good. I halved the recipe and baked it in a 9x9 pan; still at 30 minutes at 350 degrees. It was great with the warm milk, but it;s also good if you just eat a square by itself; kind of like an oatmeal cookie.

Laura, made your baked oatmeal this morning for my 6 kids. Everyone ate it, but were not as excited about it as I had hoped. I loved it & I HATE oatmeal!!! I think next time I am going to add more of the spices I use when I make my pumpkin bread. My kids really do like spices, not hot, but spices. We also put organic vanilla yogurt...very good!!! Thanks for sharing your recipe, in my book it's a success when I can get most of them to eat it!!!

I am glad you liked it! :) Yes, you can add any spices you like--if I had some, I would have added pumpkin pie spice--I guess I could make my own, huh? :)

I think my kids would like it if I made it even sweeter! Sometimes I add a little extra brown sugar. YUM!
