This recipe is so delicious! I could eat bowlful after bowlful. Good thing it is so healthy! This is a great recipe to bring to a potluck.
Quinoa Greek Salad
2 c. quinoa
4 c. chicken broth
1 cucumber, seeded and diced
1/4 c. red onion, diced
1 package grape tomatoes, halved
green, red, yellow, orange peppers--chopped small--I did maybe 1/4 c. of each
1/2 bag of fresh spinach, chopped small
1 c. feta cheese
green onions
black olives--optional
fresh parsley--optional
Basically any veggies you want! :)
Dressing:
2 T. olive oil
1/4 c. lemon juice
salt and pepper
1/2 t. oregano
1/2 t. basil
1/4 t. garlic powder
Rinse the quinoa and then toast it over med-high heat for 10-15 minutes. This gives the quinoa a great flavor. Add chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes, until liquid absorbed. Meanwhile, chop all of your veggies. Combine dressing ingredients. Cool quinoa then add to veggies. Add feta. Pour dressing over and toss.
